Overview and metadata sections
Little is known about this volume's creator, Julia Culver, other than that she was in Capri, Italy in 1903 and wrote mostly in English and occasionally in German. While Culver started this volume in Capri, some of the recipes, including Malvern and Manchester puddings, indicate that she may have been British.
This volume contains nearly 500 culinary and household recipes, most of which are clippings, written and compiled by Julia Culver in Capri, Italy between 1903 and 1909.
The volume itself is a composition-style notebook with significant damage to the binding and brittle pages. The volume contains numerous newspaper clippings bearing recipes pasted in throughout. There are additionally numerous blank pages (p. 18-20, 29-32, 42-43, 47-50, 70-80, 84-85, 87-93, 102-106, 120-124, 127-132, 135-136, 153-155).
Most of the recipes are written in English, but there are a few written in German as well (p. 13, 40, 99, 125, 137). The clippings are written in English. Several hands contribute recipes throughout this volume.
There is an index (p. iii-vi) and the recipes are organized into the following sections: meats (p. 1-7); vegetables (p. 8-14); fish (p. 15-17); fillings and sauces for meats, fish, and puddings (p. 21-23); eggs (p. 25-28); entrees (p. 35-41); "sallads" (p. 45-46); jellies, jams, and juices, drinks (p. 51-67); garnishing (p. 69); bread, buns, etc. (p. 81-??); cakes, tarts (p. 95-101); puddings (p. 107-114); miscellaneous desserts (p. 115-119); soups (p. 125-126); miscellaneous recipes (p. 133-134); for toilet purposes (p. 137-138); and household suggestions (p. 141-158).
Examples of recipes in this volume include Italian beefsteak (p. 1), mutton currie (p. 2), maître d'hotel butter (p. 21), Champagne sauce for boiled guinea (p. 23), deviled eggs (p. 25), cheese fondu (p. 39), tomato, truffle, and celery salad (p. 46), fruit cream (p. 52), real Scotch shortbread (p. 81), lemon pie (p. 96), peanut cookies also made by miss Kittie Drake (p. 100), Malvern pudding (p. 107), Manchester pudding (p. 107), for whitening hands (p. 143), to shrink cotton goods (p. 147), and mad dog cure (p. 149).
