Abstract:

A volume with vellum covers comprised of culinary recipes by an unknown author, probably from Doncaster, Yorkshire, England spanning the years from approximately 1820 to 1843.

A volume with vellum covers comprised of culinary recipes by an unknown author, probably from Doncaster, Yorkshire, England spanning the years from approximately 1820 to 1843. The recipes include cakes, cheeses, coffee, jams, jellies, meat dishes, meat jellies, picklings, preserves, shellfish dishes, savory pies, and wines. There are many recipes for preserving fruits, puddings, and soups such as preserving whole oranges and pears; bakewell, cabinet, Dutch water, marrow, souffle, and Swiss puddings; and asparagus, blue peas, carrot, ox cheek and winter vegetable soups. Highlights of other recipes include Carolina snow balls, Devonshire butter, lobster salad, orange chips, oyster pie, sausages, sago, Spanish puffs, Stilton cheese, and tomato sauce. There are some recipes to make soup for the poor with the cost for making 160 gallons. There is also an entry on the value of the use of rice. A few household recipes are included such as to restore purple, the use of charcoal, cold cream, and lip salve. Many of the recipes include attributions and several recipes include margin notes. A table of contents is at the beginning of the volume followed by 137 numbered pages. A label on the inside front cover reads: Dr. J. Webster's cerevisia anglicana, or highly concentrated English diet drink prepared only by E. Slee & Co. Southwark. A label on the inside back cover reads: Sheardown & Son, Doncaster.
