Overview and metadata sections

Ruled notebook with marbled covers containing 140 pages of handwritten recipes in Spanish circa 1907. The volume is comprised of Mexican culinary recipes recorded by an unknown compiler, possibly living in Puebla, México. The volume is organized by type of recipe. Basic foundation recipes such as those for broth, pastry, and puff pastries precede soups, main dishes, and desserts. The recipes consist of appetizers, pastries, main dishes, soups, breads, fish, and an assortment of desserts including cakes, pastries, candies, and cookies using almonds, walnuts, fruits and creams. There are recipes for savory pies using chief ingredients of eggs, beans, garbanzo beans (chick peas), eggplant, sweet potatoes, and tomatoes. Several fish dishes with shrimp, oysters, lobster, pompano, and salted cod (bacala) are included in the volume. There are meat dishes for chicken, mutton, and pork. Recipes for soup comprise twenty-four pages in the volume. Included in the soup recipes are consommés, broths, stews, lobster soup, oyster soup, shrimp soup, tortoise soup, rice soups, and various meatball soups. There are some recipes for bread at the end of the volume. The date "7-8-1907" is written on the inside back cover.
